As the fourth and fifth generations to toil at helm and stove, Daniel and Stéphane Chambon display their creativity in their uses of truffles and foie gras, cèpes and game meat. Traditional yet innovative, flavourful but subtle, and whether served on shaded terraces or in the formal dining room, their dishes vary according to the seasons and their fancy.
