appily, this is a region where the local produce - whether fish, game, meat, fruit or vegetables - is famed world-wide for its superb quality.

However elegant the superstructure, the cuisine is the dynamo that drives the whole ship. And the fuel that powers it is the Chambon family’s unswerving belief that, if you really want to scale the culinary heights, you always can.

You may be amused by a "sculpture" of garlic, asparagus and artichoke as a wall decoration, but it highlights one of chef-cuisinier Daniel Chambon’ constant maxims :
- and no great chef can achieve that without simple raw materials which are the best of their kind.
However good the produce, though, the art which sets a top chef apart from ordinary mortals is knowing which to choose each day. You’d expect him to be familiar with the secrets of a lush Poularde or of the finest foie gras and truffles.
But where Daniel Chambon scores, no matter if it’s just a plate of girolles or the sweetest seasonal red fruits, is his unerring eye for the best of the best.

Among big-name fellow-chefs who have paid tribute to the successful realisation of this aim, at the Pont de l’Ouysse, are Michel Guérard, Thuries and Lucien Vanel - along with such V.I.P.s as the cartoonist Sempé, the dessinateur-écrivain Cavanna, former F1 racing driver Jacques Laffite, the chanteur Claude Nougaro, film stars Julie Arnold, Juliette Binoche and Jean-Louis Trintignant, and many more.
